Don't miss out this Easter just because you're gluten free! Enjoy the added flavour of hazelnuts in these delicious Hot Cross Buns. We are pretty sure you will find one is just not enough!
Ingredients
Dough
- 3 cups gluten free flour
- 1 cup Davis Downs Hazelnut Flour
- 5 tsp Instant Yeast
- 1 ½ cups warm water
- 100g butter (softened 1 tsp apple cider vinegar
- 1 large egg
Fruit and Spices
- 1 Tbsp Cinnamon
- 1 Tbsp Mixed Spice
- 2 tsp ground ginger
- 2 tsp nutmeg
- 1 tsp salt Pinch of cloves
- 1 cup Sultanas
- 2/3 cup mixed peel
Crosses
1/3 cup gluten free Flour
¼ tsp Baking Powder
¼ cup water Glaze
3 tbsp Caster Sugar
2 tbsp water
Method
Dough
Either with a bread Maker (dough mode) or by hand
- Combine Dough ingredients into Bread maker, press dough mode
- Combine fruit and spices and add to bread maker (dispenser) or after it beeps
- Divide dough evenly into 12 pieces, using lightly oiled hands roll each piece into a ball and place 1-2cm apart on a large baking lined oven tray, cover with a piece of oiled cling film and leave to rise in a warm place until almost doubled in size
Crosses
- Make the cross paste by mixing the flour, and water together, transfer to a piping bag
Glaze
- Bring the sugar and water to a boil in a small saucepan, when the sugar has dissolved, remove from the heat
- Preheat oven to 180 C fan Bake Pipe crosses onto buns Bake for 20 minutes until golden brown Brush the tops of the buns with Glaze Enjoy as is, or with your favourite topping or a dollop of butter!
